The Delaware Phoenix Distillery is a small batch, micro-distillery specializing in herbal distilled spirits, especially ones using grand wormwood (Artemesia absinthium) and it's relatives. The distillery is located on main street in Walton, New York, a small village located in the Western Catskills, about 3 hours from New York City. I established the distillery in 2008 and received our operating permits from the state of New York in January 2009.
What does small batch mean? Currently there are two stills: a production still with a total capacity of 35 liters (about 9 gallons) and a 5 liter (1.25 gallon) product development still. Many craft distilleries have much larger still than this (maybe 400 liters). I aspire to have a 100 or 150 liter still as a production still, but I'm not to that point.
The focus of my products are on wormwood based spirits, especially absinthe. I make absinthe because that's the spirit that interests me.
